I’m with Roto13, I’d probably go for butter chicken, or murg makhani as it may be called. Definitely Delhi style (I’m thinking of a particular restaurant here in Pune that does it really great, very, very buttery (and service inversely proportional to the taste)).
There’s another restaurant here in Pune that does a fantastic chicken kheema.
On the other hand (er, the veg hand…), I really like paneer pasanda from yet another restaurant.
And my Punjabi friend’s Mom makes a fabulous sarson ka saag…
There’s a Indian restaraunt in Inglewood that makes this awesome dish called Nihari… My friends and I are seriously addicted to it. We make a ritual out of going together at least once a month and chowwing down! Makes my mouth water just thinking about it… man, I think it’s been over a month already, better make some plans!
One of my favorite North Indian dishes is saag paneer. (Heck, anything with paneer tastes awesome, imho.) South Indian dishes that get me going: paper dosa, iidli with coconut chutney, uupma. Man, now I’m REALLY getting hungry.
There’s too many things to choose from; rogan josh, khulla keema, murgh makhani, dal makhani, chhole, rajmah dal, tadka dal, palak paneer, aloo mattar…

The food in India rocks….the most tasty food available is here in India. I love Biriyani and chicken chaap, do try them if u find it in ur place i bet u will love it.
